Somerset Redstreak 2025 – 8.4% ABV

Somerset Redstreak is one of the greatest cider apples. It is a soft, bittersweet – a variety that carries in its complex, dry flavour all the heritage and meaning that more than five centuries of cidermaking carries across Herefordshire and the West of England. An astounding apple that on an extraordinary vintage has produced a cider of the highest quality. There is richness, spice, bitterness. There are layers, there are mysteries, there is sophistication. A cider which makes us on the farm simply laugh with glee. A pleasure.

White Norman

White Norman 2025 – 7.6%

White Norman, also known as Blanc Mollet, is a precious French bittersweet variety that has been grown in Herefordshire for over 150 years. It produces beautiful small apples that look like snowdrops – but which bruise easily on picking, owing to the exceptionally gentle tannins and thin skin of this ancient variety. This is a rewarding cider with juiciness, spiciness and perfectly ripe apple character. A rich and tasty drink! Perfect with Tarte Tatin, or for a savoury option, a roast dinner!

Barland 2025 – 7.8%

A variety grown and used for Perry making in the Three Counties as far back as 1662. Barland pear trees are tall, narrow and vigorous, producing a heavy crop most years, and seem to be a remarkably healthy tree to have endured for four centuries. The Perry of the 2025 vintage is superb and delightfully full bodied. A complex aroma that balances citrus fruit with pear skins and wet slate. Then there is delicate top of the mouth acidity with hints of lemon, lime and melon and rounded off with a delicious gentle bitterness.

Saycell’s Unknown 2025 – 7.0%

Saycell’s Unknown is genetically unique perry pear with a name lost to time. Seven precious trees grow at the remarkable Saycell’s Farm, and thanks of the effort of Felix, Clemmie, Mike and Dawn, we are able to bring this completely unique drink to your glass. A truly rare Perry pear, Saycell’s Unknown has a rich, complex taste with good structured tannins. We chose to deepen the flavour by fermenting partially in oak casks, softening the bitterness and drawing out a honeyed pear flavour

Autumn 2024-2025

Autumn Cider 2024-2025 – 7.2% ABV

This is a complex and full bodied multi-vintage blend of Kingston Black, Major, and Yarlington Mill. These are famous apples, brought together to create a drink that equally tastes of the fresh fruit and the richness of matured cider. It is spiced apricot tart with vanilla icecream and yet it is also structured and tannic. It is, above all, a celebration of cidermaking.

An unusual 18th century cider apple which almost became extinct. Described in 1884 as “highly esteemed in some districts of” Herefordshire, we can assure you we feel the same today! The flavours are a melange of apricot, orange, toffee and vanilla, all bursting out of the drink with beautiful intensity and in a vivid delivery. We started growing this apple in 2019 after sourcing wood from a museum collection, and are now proud to be sharing the scionwood with other excited apple growers to keep this variety alive for the next century. Great with lamb koftas or tangy curries

Dabinett & Bramley Collaboration Cider

Once every five years, an alignment occurs that heralds ancient magic. Nightingale’s Bramley, with its zippy green acidity, meets Ross-on-Wye’s Dabinett, bringing notes of aromatic vanilla and gentle, complex tannins. Fermented separately, with the Dabinett aged in oak barrels, this cider tells a story of East and West, of Kentish and Herefordian cider making, brought together in perfect balance.

Thorn 2025 Pét Nat – 3.8%

A unique, naturally sweet, naturally low alcohol offering from one of the greatest of Perry pears. Thorn, an exceptional Perry pear first recorded in 1676, produces spectacular perries full of zesty lemon, zingy lime, and floral elderflower. All of those gorgeous citrus flavours are balanced by a natural sweetness from retained fruit sugar. The combination is glorious, moreish, a total capture of the summer sunshine in your glass. Drink cold and enjoy with smoked salmon or creamy cheeses

 Somerset Redstreak is one of our greatest apples. In this cider we have a subtle but rewarding drink; aromatically rich and luxurious with notes of lacquer, fresh apple and resin. On the palate the cider is silky smooth; tannins so gentle they cushion and cradle your palate through the most extraordinary dry cider, with delicious spiced, poached apples present on the tongue. A cider for drinking again and again.

This is a soft and gentle drink, comforting us as the cold winter nights wrap around our souls, encouraging us to keep working through the harvest, with the gentle and subtle flavours of Bisquet guiding us on. Hay, lemongrass, lime leaf, light and teasing on the palate as only this most beloved and underrated of apples can be. A marvellous cider, perfect with any occasion. Dry, smooth, and so, so more-ish.

This is swashbuckling cider, rambunctious cider, joyful cider. Full bodied, bursting with flavour, totally dry and yet overwhelming with fruit delivery. Winter spiced clementine, juicy oak cask notes, rich madeira, precious brown sugar. This is the sort of cider that makes us fall in love with cidermaking again and again, vintage after vintage. Nothing but the fresh juice, fermented in oak, given time and space to be this most marvellous, astounding of liquids.
